This course will teach you how to identify and use the most commonly found winter wild edible plants and trees of the Southeast. During classroom time, you will learn what to look for in order to positively identify winter edible plants, toxic lookalikes, the most common edibles found this time of year, and how to process bark and roots to make them more palatable and calorie-dense. During the practical part of the class, we will go outdoors to locate various plants that can be harvested for food, taste them, and process them in various ways.
Wear clothes and shoes you feel comfortable walking in, and potentially encountering insects, snakes, other critters, poison ivy or poison oak.
